Thanks for the question - honestly a hard one to answer in one line.
I've been part of interviewing candidates for our team too. For the ability to learn and adapt, and other skills I want to hear about, I ask questions - I don't just rely on a line on the CV. Most of the time I ask about their experiences. If you try to pull answers from your head on the spot, you might walk out of the interview thinking "I should have shared this and that" - so my key tip: be prepared.
Draft a story from your past/experience - a time you picked up something new, or had to adjust when things changed - and have it ready when asked. Gather possible questions beforehand and think of which experience fits each one. Same if they ask how you adapted to a new role - have a real example ready, not a generic/imaginary answer.
